I would like advice on driving route 500. Starting in Inverness and travelling anti-clockwise. I need to plan a good itinerary, places to see, places to stay, managing time for driving/sightseeing. Which time of the year to travel the route.

Have a look at the page at https://www.visitscotland.com/see-do/tours/driving-road-trips/north-coast-500/ which has lots of ideas about what to see and do, as well as some tips on planning your adventure.
The official NC500 website is also great for planning an itinerary and finding out where to stay and what to see on an interactive map:

You should book your accommodation in advance. It is a popular route in the summer months so you might enjoy the quieter months which will still have long hours of daylight and a chance of some sunshine along the way (May, September)
There are already some discussions on the community about NC500 which could be useful for you.
