Being a photographer, I'm interested in exploring abandoned and castle ruins in the countryside. What are the laws concerning this and accessing private property? Is it generally acceptable to wander without permission from the owner?

Did you have anywhere particular in mind? I believe you need to take it on a case-by-case basis. Many structures are privately-owned and others may be closed-off for public safety.
As I understand it, you are breaking the law if you have to break-in to a building, if you destroy or take anything or if you are abusive when asked to leave.
However, there are plenty of castle ruins and historic structures fully accessible to the public - see https://www.historicenvironment.scot/visit-a-place/explore-by-region/.
