Also Aberdeenshire and Royal Deeside is worth seeing. There are fairytale castles galore.
Dumfries and Galloway is beautiful too yet all to often overlooked. Portpatrick and Wanlockhead are favourites of mine.
There's also Ayrshire - Rabbie Burns country. His hometown Alloway is lovely and well worth visiting. Culzean Castle too is an iconic site.
I'd also be tempted to focus less time on Skye and hop across to Harris, Lewis and Scalpay. In my opinion you're going to miss one of the most spectacular places in Scotland, yet you'll only be a short ferry hop away on Skye. Skye is a little over rated. I'm not a huge fan, although I do use it as a base for island hopping elsewhere or for walking if I'm in the vicinity. I tolerate it more than like it. It seems a bit like Marmite as the travellers I speak to either love it or share my lack of enthusiasm for it. On Harris and Lewis you have the Neolithic stones at Callanish and Luskentyre Beach. It's impossible not to be blown away by them.
Mull I adore, it's my favourite place in Scotland. Try and hop across to the tiny island of Ulva. It's a short hop via a small on demand ferry. It's an unspoiled wilderness and beautiful to hike around. For a population of only 7 they have a fantastic and hugely popular restaurant called The Boathouse. It serves cakes to die for after a long hike. Also don't miss Iona when you visit Mull. Your itinerary misses one of Mull's prettiest drives to the Iona ferry. Iona is a really special place. The ferry across from Mull is quick and even a half day will give you a good taster of the island. If you can do the boat trip to Staffa to see Fingal's Cave. It'll totally wow you.
I write a Scottish travel blog. You'll find several post covering the NC500, Mull, Harris & Lewis, plus Ayrshire, Aberdeenshire & Dumfries & Galloway. It might give you a feel for some of the spots omitted from your plan. http://theweewhitedug.com/
Hope this helps. Wherever you end up you'll have a fantastic time. I'm absolutely addicted to road tripping in Scotland and never, ever get bored.
