Food Allergies

I live in the US but have been to Scotland more than a dozen times as my mother was born and raised in the country. However, I have never taken one of my sons who is now 18 but has life threatening allergies to nuts. He really wants to go so we are going this summer. I want him to see the Orkneys and Iona so we have plans to go there as well as all of my favorite places. I am wondering if anyone has any advice for places to avoid or general advice regarding traveling with an allergy. I plan on loading a backpack with safe food while we are in the highlands, but not sure if anyone has any info that might be helpful??
